Fiesta Chicken

Fiesta Chicken- This is a dump and go recipe, just dump everything in the crockpot and go! After sitting in the slow cooker for so many hours, the chicken shreds very easily, you can have the kids do it! This dish goes great with rice or tortillas, and my family loves topping it off with sour cream, cheese, and salsa.


Ingredients:

2 pounds of boneless skinless chicken breast

1 package of McCormick Slow Cookers Fiesta Chicken Seasoning Mix

2 cans (14.5 ounces each) of diced tomatoes, undrained

1 can of whole kernel corn, drained

1 can of black beans drained and rinsed

Directions

  1. Place chicken in slow cooker

  2. Mix seasoning mix, tomatoes, corn and black beans together. Pour the mixture over the chicken

  3. Cook 8 hours on Low or 4 hours on High

  4. Remove the chicken from the crockpot

  5. Shred chicken using 2 forks. Return to the crockpot and mix well.

  6. Serve with cheese and salsa.
