Chinese Stir Fried Tomatoes and Tilapia

I always keep frozen salmon or tilapia in the freezer. Fish is a guaranteed biweekly meal. Normally I don't keep tomatoes or eggs on deck. When my family visited Fourth of July weekend, I got a cartoon of eggs for my egg loving nephew, and I there were 4 eggs in the cartoon that I had to use before they went bad. The tomatoes were supposed to be used for a soup diet, that me and my fiance never went on. This recipe was basically a use what you have before it goes bad meal, but was really healthy and turned out pretty good!


Ingredients

  • 1 and 1/2 tablespoon of sesame oil (or vegetable oil)

  • 4 eggs , beaten

  • 2 big tomatoes , chopped

  • 3 cloves garlic , chopped (about 1 tablespoon)

  • 1 teaspoon salt

  • 1 tablespoon granular sugar

  • chopped green onion for garnish (Optional)

  • Tilapia

  • Garlic powder

  • Basil seasoning

  • Five chinese seasoning

  • Steamed rice to serve with

Instructions

  • Heat 1 tablespoon oil in a medium sized skillet over medium high heat. When oil is ready, add egg and cook until the bottom side is done, but the top is still raw, about 30 seconds. Stir with a spatula, chopping the egg into bite sized pieces, until egg is just cooked. Turn to lowest heat, transfer egg to a plate, and set aside.

  • Add the remaining 1/2 tablespoon of oil and the garlic and turn back to medium high heat. Stir the garlic a few times until fragrant. Add tomato and stir fry until the edges are slightly charred and texture becomes soft, about 1 minute. Add egg back into skillet and spread salt and sugar on top of it. Quickly mix everything together will a spatula until evenly seasoned.

  • Season tilapia with five Chinese seasoning, garlic, and basil

  • Put in oven for 15 minutes

  • Serve warm over steamed rice.
