Chicken and Dumplings

The ultimate comfort food...delicious chicken and dumplings! I was a little intimidated by this meal, I was convinced it was something that only experienced Mothers and Grandmothers could make. Once I figured out how to make it in the crockpot, the intimidation disappeared. Enjoy this comforting dish :)

Ingredients:

1 onion, chopped

1 ¼ pound of boneless chicken breast

1 tsp of dried oregano

Salt

Pepper

2 cans (10.5 oz. each) cans of cream of chicken soup

2 cans of chicken broth

2 stalks of celery,chopped

2 large carrots, chopped

1 cup of frozen peas, thawed

3 cloves of garlic, minced

1 can of refrigerated biscuits

Directions:

  1. Spread onion in the bottom of the crockpot then top with chicken. Season with oregano, salt, and pepper.

  2. Pour over soup and broth. Cover and cook on high until the chicken is cooked through, about 4 hours.

  3. Shred chicken with two forks. Stir in celery, carrots, peas, and garlic.

  4. Cut biscuits into small pieces, then stir in the crockpot with chicken.

  5. Cook on High for about 1 hour . Stir again.

  6. Serve and enjoy
